People think that cheung fen is like steamed spring rolls. Do you think the same? If so why don't you see cheung fen being made by large scale dimsum food manufacturs?
The recipe is based on a rice flour dough. Therefore it is suited for glutenfree lovers! Making process involves a wet cloth stretched over hot steam coming from the button of boiling water. First the wetted rice flour is poured over the cloth to allow it to gain texture at very high steaming temperature. Then we quickly take it out and wrap it around long time marinated pork in soy sauce. Then we fold it to a roll followed by steaming a second time. Finally we season it with sweet soy sauce and sprickle with spring onion!
