In China people have dimsum everyday in the morning as part of their morning tea drinking ritual, Ha Gao is also known as the Big Three. By this the locals mean there are 3 dimsums that every tea drinkers must order every morning these are:
1) Ha Gao
2) Siu Mai
3) Char Siu Bao

HA in ha gau means shrimp, so essentially it is a gaozi made of long time hand chopped shrimp. At Hidden Dimsum we care so much about the texture, so we topped the fillings with celery and ginger. Then the filling is packed with a thin layer of rice flour paste made using a flat pressing technique with the same kitchen knife that is used to chop the filling.
