Why is char siu bao not enough? We already have a tremendous success with char siu bao alone that at one point we thought if we should change the name of Hidden Dimsum to Char siu bao, and have a store with cheaper rent selling char siu bao alone - we quickly abandoned this idea!
At Hidden Dimsum exploring is our nature. Can we make a small bao, much smaller than char siu bao? Sure we can! Just because we can should we go ahead a do it? No!
We wanted something to beat char siu bao on the juicy and flavor inside the fillings. Therefore, we reduced the form factor of char siu bao. By doing so we changed the proportion between fillings and the paste. Then we went all in and changed the paste as well and base it on a wheat paste without rising. Why? Because we don't want to give you a steamed soft bread like feeling in your mouth, as otherwise the paste itself works like a sponge and soak up all the juice from steaming the meat! The filling is based upon long time chopped pork with mushrooms, veggies and ginger. By doing so lots of umami is left inside the bao. We steam it fresh and right after drive immediately with the steamed bao to your home!
