Sorry for our rebellious attitude but who says that dimsum should have a traditional filling of shrimp and long time chopped meat? Why can it not be solely vegetarian based? What can be more beautiful than that to incorporate tofu inside the fillings and let it soak up all the tastes from the rest of the ingredients?
The above is how we addressed the challenge and our dreams to our dimsum chef. We then ended up spending more than 4 months to develop the recipe. You see tofu is a very soft material and therefore extremely difficult to steam and incorporate into dimsum. We solved the challenge and here you have a thin rice paste wrapped with enoki mushrooms and spinach.
